Eating Your Raw Green Vegetables for Great Health

Green vegetables are an indispensible part of a truly healthy diet.

It’s unfortunate that most of us don’t eat anywhere near enough of them.  To be clear, I’m not just talking about people eating a mainstream western diet.  I’m including most vegetarians and vegans as well. 

One of the reasons we all seem to pass on the veggies is because we don’t really appreciate how valuable they are to our health.  As great as fruit are at providing energy and vitamins, they need some help with the minerals. 

Did you know that 95% of your body functions are mineral-dependent?  In other words, if you aren’t getting your minerals, there are a ton of problems that can develop. 

So it’s a good thing greens are loaded with them — especially alkaline ones.  

Green vegetables are our best source of minerals because they’re highly absorbable.  Unlike most cooked foods, greens aren’t acid-forming, so they don’t deplete our mineral reserves during the absorption process.

Their nutritional makeup of vegetables is very balanced.  It might surprise you to know they even have a bit of fat and protein.  Next time you eat some romaine lettuce, try to remember to watch for it.  You’ll actually notice the faint oiliness on the leaves. 

The protein in greens is only about 1% of the total volume, but it’s very high-quality.  It contains all the essential amino acids and is highly absorbable (because of the wealth of alkaline minerals that help in the assimilation process).  Best of all, the protein from greens won’t putrefy like the protein in animal products. 

Perhaps the most distinctive characteristic of green vegetables is chlorophyll.  Chlorophyll is the life-blood of plants and is extremely beneficial to humans as well.  Remarkably, chlorophyll is only one molecule away from being identical to human blood.  This means when you eat chlorophyll-rich greens, you’re literally providing your body with everything it needs to make healthy blood.

Green vegetables are totally the opposite of the refined foods.  Refined sugars, flours and fats have virtually no nutritional value whatsoever and just feed you empty calories.  Flipping things around, greens are actually very low in calories but loaded with nutrients.  This is great for maintaining a healthy body weight because you don’t have to eat a ton of calories when you get your minerals.  Because you’ll get the nutrients your body is calling for, your appetite will be satiated quickly.  You can actually get many of the minerals you need while only eating a few hundred calories.

Much like fruit, vegetables are excellent for your digestive system.  They’re very rich in good-quality fiber which is gentle and doesn’t irritate the colon.  This fiber is essential for brushing the bowels clean and keeping the food moving along smoothly.

Do yourself a favor and make sure you eat plenty of green vegetables!  After fruit, they’re the next biggest part of your raw-vegan diet.  :^)
